This week, we’re excited to feature a beloved dish from Angella Fleming, one of our Coastal Wealth team members. Angela’s Jamaican Oxtail with Rice and Lima Beans is a staple of her culture and brings together bold flavors with a soul-satisfying warmth that reflects the heart of Jamaican cuisine.

Angela’s Jamaican Oxtail with Rice and Peas

Ingredients for Oxtail:
  • Oxtail pieces
  • Onions
  • Fresh thyme
  • Bell peppers
  • Water for braising
Ingredients for Rice and Peas:
  • Long grain rice
  • Kidney beans
  • Coconut milk
  • Salt

Cooking Instructions:

  1. Cooking the Oxtail:
    • Begin by browning the oxtail pieces in a pot with a little water, cooking them until they are tender. This slow process allows the meat to absorb deep, savory flavors.
    • Once the oxtail is softened, add chopped onions, fresh thyme, bell peppers, and lima beans. Let it all simmer together until the flavors combine, and the sauce thickens into a rich, flavorful stew.
  2. Making the Rice and Peas:
    • Start by draining the water from your soaked rice. Add kidney beans and season with a pinch of salt.
    • To give the dish its signature creaminess, pour in coconut milk and allow it to cook over medium heat until the liquid is fully absorbed, leaving you with perfectly tender rice and beans.
